Sparkling rosé brut - Organic

 

 

Varieties : 50% Grenache, 45% Syrah, 5% Cabernet Sauvignon

 

Terroir : Our parcels are all on rocky well-draining slopes. They are made up of a mix of quartz, schist, granite and marl formed during the Jurassic period.

 

Yield : 35 hl/ha

 

Vinification : The grapes were picked in the cool early morning air and pressed as soon as they arrived in the cellar. Cool-fermented over 4 weeks in tank (15-18°c) with a regular pump-over of the lees to give greater depth of flavour, the wine then undergoes a secondary fermentation in bottle and is aged for 9 months before being released.

 

Tasting note : The wine is pale peach coloured. The nose gives off aromas of fresh peach skins, flavours which are also apparent on the palate. The bubbles are fine and combine with a refreshing acidity to make the wine perfect for an aperitif, but also able to accompany salads and lighter desserts. The sparkling rosé can be enjoyed all year long.  

 

 

 

Fleur de Liz rosé

Fleur de Liz rosé Vin de Pays de l’Hérault

 

 

Varieties : 70% Grenache, 30% Syrah

 

Terroir : Our parcels are all on rocky well-draining slopes. They are made up of a mix of quartz, schist, granite and marl formed during the Jurassic period.

 

Yield : 35 hl/ha

 

Vinification : The grapes were picked by hand into small containers and were destemmed, macerated on skins for 7 hours then pressed in a vertical press. The wine was cool-fermented over 5 weeks (16-18°C°) in a fibreglass tank. The wine was then aged for 5 months in tank before bottling.

 

Tasting note : The wine is salmon pink. The nose gives off aromas of grenadine, strawberry and raspberry. On the palate, the strawberry is most apparent, with the grenadine and raspberry lingering with the fresh acidity. The wine is good as an aperitif, with salads, or Asian dishes. 

 

 

S’ Blanc

S’ Blanc - White Coteaux du Languedoc

 

 

Varieties : 50% Grenache Blanc, 40% Marsanne, 10% Roussanne

 

Terroir : Our parcels are all on rocky well-draining slopes. They are made up of a mix of quartz, schist, granite and marl formed during the Jurassic period.

 

Yield : 35 hl/ha

 

Vinification : The grapes were picked by hand into small containers in the cool morning air. They were destemmed, crushed and then pressed in a 15hl press. 70% of the wine was fermented at cool temperatures (16-18°C°) over 4 weeks, 30% in older 225, 350, 400 ane 500 litre French oak barrels. The wine is not oaky, the barrels are used for lees ageing.

 

Tasting note : The wine is pale straw coloured. The nose has pronounced citrus, honeysuckle and mineral aromas, with a slight oakiness coming through at the end. The wine has a fresh acidity that supports the citrus flavours, grapefruit, pineapple and the minerality that accentuates the good length of the wine. The wine is good with foie gras, grilled fish, shellfish, summer salads, Roquefort, or on a sunny terrace. For an aperitif try it with some Noir de Bigorre ham.

 

S’ Rouge

S’ Rouge AOP Coteaux du Languedoc

 

 

Varieties : 60% Grenache, 40% Syrah

 

Terroir : Our parcels are all on rocky well-draining slopes. They are made up of a mix of quartz, schist, granite and marl formed during the Jurassic period.

 

Yield : 35 hl/ha

 

Vinification : The grapes were picked by hand into small containers and were destemmed before being put into concrete tanks. The wines were fermented for 3 to 5 weeks and a daily pigeage for the first week followed by cap wetting ensure good extraction of the phenolic material. In order to soften the tannins, the wines were aged for 15 months mainly in unlined concrete tanks and several second hand French oak barrels of various sizes.

 

Dégustation : The wine is dark ruby. The nose is overt with aromas of morello cherries, ripe red fruits, and spiciness. The wine has a balanced acidity and tannins which support flavours of ripe dark fruit and spiciness on the palate. The wine is good with grilled or roast meat, tagines and spicy dishes. Also available in magnum.

 

 

Trinitas

Trinitas Grés de Montpellier

 

 

Varieties : 1/3 Mourvedre, 1/3 Syrah, 1/3 Grenache

 

Terroir : Our parcels are all on rocky well-draining slopes. They are made up of a mix of quartz, schist, granite and marl formed during the Jurassic period.

 

Yield : 25 hl/ha

 

Vinification : The grapes were picked by hand into small containers and were destemmed before being put into small concrete tanks. The grapes were fermented for 4 weeks. The ripe phenolics were extracted by cap-punching for the first 1/3 of the fermentation then with a gentle cap-wetting. The wine was aged for 12 months in 2nd hand French oak 300l, and 500l barrels and then 9 months in tank.

 

Tasting note : The wine is a very dark ruby. The complex nose is full of liquorice, smoke, rich black fruits, and a finish of black pepper. Flavours of prunes, black pepper, spices, thyme and leather linger in the mouth, supported by good acidity and tannins. This should be drunk in accompaniment with rich red meats, a pepper steak or chilli con carne. Allow to breathe 30 minutes before drinking.

 

Aalenien

 

Aalenien AOP Coteaux du Languedoc

 

 

Varieties : 90% Syrah, 10% Grenache

 

Terroir : The grapes for aalenien come from our best parcels of well-draining rocky slopes. They are made up of a mix of quartz, schist, granite and marl formed during the Jurassic period.

 

Yield : 25 hl/ha

 

Vinification : The grapes were picked by hand into small containers before being destemmed and transferred into concrete tanks. The ripe phenolics don't need much effort to extract, just a daily pigeage for the first 7 days then a cap-wetting by hand during the 4-5 week maceration. The wine is aged for 1 year in young 225l French oak barrels.

 

Dégustation : The wine is very dark ruby. The nose reveals a hint of smokiness, stewed black fruits, cinnamon, violets and leather. Good acidity and full tannins support flavours of blackberry, prunes, mint, tobacco, and black pepper. The wine is a good match for strong game and meat dishes. It should be decanted at least an hour before drinking. Also available in magnum.
